Oatmeal Muffins

Ingredients:

1 cup buttermilk

1 cup oatmeal

1/2 cup light brown sugar

1 cup sifted flour

1/2 teaspoon salt

1/2 teaspoon baking soda

2 teaspoons baking powder

1 egg beaten

1/4 cup melted shortening

Combine buttermilk, oatmeal, and brown sugar and let stand 10 minutes. Sift flour with salt, baking soda, and baking powder. Add beaten egg to oatmeal mixture, then add melted shortening, mixing well. Now stir in the flour mixture, using only enough strokes to moisten all ingredients: don't beat. Fill 12 greased muffin cups. Bake in a 375 degree oven 25 minutes.

In the muffin recipe you can substitute sour milk for buttermilk. Put a teaspoon of vinegar in the cup and fill with milk.
