Chocolate, Almond Rice Pudding
Recipe from Bo's grandmother, Olga Margrethe Elisabeth Ahlburg, 1916-2000
Ingredients:
almonds
white rice
milk
1/2 liter whipping cream
2T sugar
vanilla beans from 1 vanilla pod
vanilla sugar to taste
1/2 bar dark chocolate chopped
cherry sauce warmed
Directions:
Boil almonds in water. Cool completely then peel off the skin. Chop all the almonds reserving 4 or more whole.
Boil rice in milk for 1 hour until cooked, stirring constantly using a wooden spoon. Let cool and refrigerate.
Place 1-2T sugar on a cutting board and scrape the contents of 1 vanilla bean into it, mixing well. Mix vanilla sugar into cooked and cooled rice. If it doesn't taste sweet enough, add more vanilla sugar.
Whip 1/2 liter of heavy whipping cream and mix into rice milk and vanilla sugar mixture. Add chopped and whole almonds. Chop 1/2 a bar of dark chocolate and stir in. Chill until ready to serve.
Serve topped with warm cherry sauce.
The almond game: Buy and wrap a small gift for each whole almond you leave in the rice pudding. People are encouraged to chew carefully. If they find an almond, they get a present. Sneaky people don't let anyone know they have one and encourage the rest to keep eating until the pudding is gone looking for the almonds and stuffing themselves. :)
