Caramel Potatoes

Recipe from Bo's grandmother, Olga Margrethe Elisabeth Ahlburg, 1916-2000

Ingredients:

Small brown potatoes

Sugar

Directions:

Boil small brown potatoes until done, then drain and fill with cold water. When potatoes are cooled, peel with a knife. After peeled, put potatoes in a cool place until ready to cook. Fill the bottom of a saucepan with a generous amount of sugar and cook until it caramelizes. Add cooked, peeled potatoes and heat until hot, then serve.

Note: Peeling potatoes before boiling changes the taste, as does not peeling with a knife.
