Jag (Cape Verdean Rice and Beans)
Some people choose to do this without the meat, but my grandma never did. She would occasionally add a fried egg to leftovers for breakfast the next morning. - Christyn
3 C White Rice
6 C Water
1 Pkg Linguica (Portuguese sausage that’s tricky to find, can sub Chorizo. Will just be spicier.)
1 Onion (chopped)
1 (15 oz.) Can of Kidney or shell beans (my grandma would sometimes sub lima beans depending on what she had in the cupboard)
1 Tbsp Oil
2 Bay Leaves
1 Tbsp Smoked Paprika
1 Tbsp Salt
1 Tbsp Pepper
Sauté onions and sausage in the oil until browned. Add water, paprika, salt, pepper and bay leaves and bring to a boil. Add rice and beans, lower heat. Simmer for 25 minutes (or until all water is absorbed).
