Gufong (Cape Verdean Donut)
2 C Water
1 C Sugar
1 C Cornmeal (fine)
1 C Flour
1 Tsp Salt
2 Tsp Baking Powder
Vegetable Oil (for frying)
Add water and sugar to a pot and bring to a boil. Once it is boiling, add cornmeal and stir until it comes together, then add flour. Add salt and baking powder and continue mixing until everything is combined and firm. Let mixture cool and rise. Once cooled, break dough and roll into small finger sized logs. Heat oil and when hot add dough and fry until golden brown and drain. Can be topped with pretty much anything you want but most popular are powdered sugar and chocolate or caramel syrup.
