Stuffed Cabbage
1 1/2 cups rice
1 large cabbage
? onions
8 strips bacon
1 lb ground beef
1t salt & pepper
1 small can sauerkraut
1 8oz can tomato sauce
1 can tomato soup
Cook rice and cool. Partially boil cabbage and separate leaves. Cut ribs off and cool. Sauté onions with bacon. Mix with ground meat. Thoroughly mix in cooked rice, salt, and pepper. Roll cabbage with 1 heaping tablespoon of meat mixture in the center. Drain the sauerkraut and spread on bottom of small roaster. Take remains of cabbage head and dice on top of sauerkraut. Place cabbage rolls tightly together on top with seam side down. Pour cans of tomato soup and sauce over top and add enough water to cover. Lay 3 strips of bacon on top. Sprinkle with 1T sugar and simmer covered in 300 degree oven for 1 1/2 hours. Uncover and simmer 30 minutes more. Recipe originally from mom's friend, Kathy DeChellis.
