Peanut Butter Pie
1 c. powdered sugar
1/2 c. peanut butter
3 eggs, separated
2/3 c. sugar
pinch of salt
1/4 c. cornstarch
2 c. scalded milk
2 T butter
1/2 t vanilla
1/4 t cream of tartar
Mix powdered sugar and peanut butter until crumbly. In separate bowl, beat egg yolks until fluffy. Add sugar, salt and cornstarch. Beat in scalded milk gradually. Cook over hot water, stirring constantly until smooth and thick. Remove from heat. Add butter and vanilla. Cover the bottom of a 9-inch pie crust with 2/3 of the peanut butter mixture. Add filling. Make meringue with egg whites and cream of tarter and top filling. Sprinkle remaining peanut butter mixture. Bake at 350 degrees for 12-15 minutes.
