Shrimp & Spinach Pasta
8 oz. vermicelli
1t olive oil
1t minced garlic
12 oz peeled medium shrimp
1/4 t red pepper
10 oz fresh spinach
2 plum tomatoes cut up
2T lemon juice
1/4 t salt
Cook pasta. Cook garlic in oil 1 minute. Add shrimp and red pepper and cook 2 minutes. Add spinach, tomato, lemon juice, salt and cook 3 minutes or until spinach wilts and shrimp is pink. Combine pasta and shrimp mix. This is the basic recipe. Adjust seasoning to your taste. I found it very plain. Now I add Va. Brand Vidalia Onion dressing to moisten and add flavor. You can substitute frozen chopped spinach for fresh and any tomatoes you want. i leave out the lemon juice because I don't like it.
